Hyperseasonal: Hiyaoroshi
Every spring, when the brewing season has ended, a small amount of sake is selected to become Hiyaoroshi. Pasteurized once and cold stored over summer, this sake develops additional complexity as it rests. In the fall, it’s bottled and released in celebration of the start of the next brewing season. Only a small portion gets shipped out of Japan...we are so lucky to have these four.
